This dish is a meal in itself, good stuff-ing all wrapped in a delicately crispy rice crape/dosa.
Masal Dosai!!!

Dosa + coriander chutney + coconut chutney + potato masala = Masala Dosa.
Chutneys and potato masala
|
coriander chutney:
1 med onion
2 dry red chilli
1 tbs shredded coconut
1/2 tsp lemon juice
1 tsp oil
salt to taste
Spread the coriander chutney

1/2 cup shredded coconut
1 tbs roasted grams/ kadalai
1 dry red chilli
1/2 tsp lemon juice
1/2 tsp lemon juice
salt to taste
Wet grind all the above ingredients.
1 cup cooked and mashed potatoes
1 med thinly sliced onion
2 sliced green chillies
1/2" crushed ginger
1/8 tsp turmeric powder
2 tsp chana dal/ kadalai parupu (soak in water for 1 hour)
1/2 tsp chilli powder
1/2 tbs oil
1/4 cup cooked peas and carrots (optional)
salt to taste
Fry the onions, green chilli and ginger in oil, add the turmeric powder, chilli powder, salt and the soaked dal, stir for few mins. Lower the heat, sprinkle 2-3 spoons of water and let the dal become soft, add the cooked potato and cook for few more mins till the potato gets incorporated with the masala.
4 cups dosa batter
oil or ghee as needed
If the batter is thick add some water. Heat the dosa pan, apply oil/ ghee to its suface, spread 1 ladle of batter and spread it around with the back of the spoon. Turn it over when the dosa becomes brown on the pan side. Remove it from the pan immediately.
Masala dosai:
Spread 2 tsp of chutneys over the dosa. Keep 2 tsp of potato masala in the middle and fold it.
Ready to eat!
