Paruppu Usili : It’s crumbly soft dal combined with vegetables such as green beans, banana flower, cluster beans, asparagus, greens etc
This delicious Poriyal goes nicely with plain & variety rice, flat bread it’s a dry curry.
Ingredients:
- Green beans - (chopped) 2 cups
- Oil - 3+ 1 tsp
- Chana dal/ kadalai paruppu/bengal gram
(We can substitute canned or dry garbanzo beans too)
4. Garlic - 2 cloves
5. Dry chilli - 3 or according to your taste
6. Green chilli (optional)
7. Turmeric - 1 tsp
8. 1/2 cup water
9. Salt to taste
1. Wash and soak chana dal/ kadalai paruppu/bengal gram/ for 1 hour, drain the water completely.
2. First, grind red chillies, garlic, green chillies and curry leaves coarsely, add coconut and pulse twice.
3. Now add the dal and pulse once or twice it should be coarse & crumbly not to a paste ( do not grind everything together) We can use mortar and pestle to crush too.
4. We can substitute canned garbanzo beans too, remove the skin wash in ice cold water and crumble it, but always try this awesome recipe using dry bengal gram
5. Heat oil in a pan, lower heat and add mustard seeds and urud dal, after it turns light brown. Keep the heat to med/high Now add the ground dal, mix it well, now add beans, turmeric powder and salt to taste, stir it nicely for few mins.
6. Add 1/4 cup water, close with a lid. Cook the beans till it’s done, (add more water if needed, till it’s cooked) add the remaining oil when it becomes dry and the dal looks soft and crumbly, keep it in low for 2 more minutes and remove from heat
7. This creamy veggie goes nicely with buttermilk kulambu, rice or any other spicy kulambu/stew.
